Also, any idea if you'll support other frameworks later on as well, such as Codeigniter?

Yes this is some very good questions. Our current supported version of Symfony is v1.4 as you might have seen. We have been discussing internally when upgrading to Symfony v2.0 would be a good timing, and we haven't set a date yet. The question is what is the added benefits, and there is of course a few :o) So i guess we will start the migration in the very near future after having released Studio.
Upgrading to Symfony v2.0 is not a must though and not so visible for AF developers, but of course handy for those of you already writing SF v2.0 apps. And we can gain a few performance benefits by upgrading, with the more dynamic core architecture of Symfony which can be customized even better. And turning to SF v2.0 will also make code more safe for the future :o) So upgrading it's definitely on our todo list.
Regarding other frameworks like CodeIgniter, Zend, CakePHP our target is a bit different. Rather than supporting many underlying frameworks directly through AppFlower. We want to ease the task of development. So getting more results for the time you invest in making an application. Like better integration of already prepared plugins, abstracting development even more (but still keeping the layers open for extension and modification), enhanced core functionality (like printing, view types, templates, output engines, high performance setups etc.). On the other hand there already exists some bridges that makes it possible to re-use so of the other frameworks through Symfony. So AppFlower users can still harvest the libraries made available in other frameworks, like those of Zend.
So one of the things we will be supporting in the coming versions of AppFlower, is other rendering engines besides Sencha which we use today. This could be jQuery, HTML5 and so on.

There is much news on Symfony, and then. The last few months we have been working on making AppFlower a more complete and stable application development suite. And i believe we are getting closer. We still have few parts we believe is important first to get implemented in appFlower, and around it to make it easier to use. Like improved error-handling in engine and studio, auto-correction and migrations in models layer. Together with a new samples archive, which hopefully will make it easier to learn, and get inspired by existing functionality.
I believe when this development cycle is finished, we will start to take up the work on how to improve the engine, decoupling a few parts.. and make the rendering (output generation) more adaptable and extendable. To allow the support of multiple output templates..
Is there specific features of Symfony v2.0 you were looking for? -

I'm just picking the tools for a webbased forest management software. I want to make sure, of course, that I'm picking the right tools. So I interpreted the supported Symfony and ExtJS version as an indicator for the progress of this project. However, I fully understand, that prioritizing the stability and completeness of AppFlower makes sense. -
